I've been faced with a similar issue, and have found this website to be very helpful
Strobist. It gives loads of advice about using standard flashguns for pro lighting results. Even better you've already got one SB-800, which does away with the need for the expensive radio triggers mentioned on the site.
I'm going down the route of mutliple nikon CLS flashes with umbrellas & stands.
