055 tripods are solid as a rock but the metal versions are heavy. 190s are smaller obviously but still very stable - unless you get large aperture telephoto glass I think a 190 would do you fine. As you've got a big budget look at the carbon fibre versions. I wouldn't get anything ridiculously (sub 1kg) light as it'll be over in the first gust of wind and may not offer much of an advantage over hand holding to avoid shutter/lens blur.

Work out how much weight the legs can take, work out how much weight the head can take, work out how much the head and camera and lens weigh to work out if the legs can take it. Always work within a buffer too so if your head-lens-camera weighs 3kg and the legs can only take 3kg, look for something heavier duty.

I prefer a 3 way head to a ball head but its really personal preference.
