Well, I'd say dump the UV as unnecessary and if using ND Grads, dump the polariser. Perceived thinking is that it's better not to use one with waterfalls and if you've an alternative method of reducing exposure then use that
Whilst covering the viewfinder is, in theory, a good idea I believe it only becomes more necessary with the much longer exposure (more than 5 seconds). Having said that, I've never bothered and don't think I've ever encountered ambient light sneaking in!
