I sometimes convert in Adobe Raw which now offers an 8 channel colour mixer. However, in a typical image at least 3 of the 8 colours have no effect so 8 is probably over the top. The B&W converter in CS3 with 6 channels seems to be ideal and this is method I use most of the time.
