I'm always unsure about this kind of shot. Usually start with about + 1 stop or more then work from there with a few trial shots although it is difficult to determine the right one until you get it on the big screen is showing. With something like this it's difficult to get detail in both the shadow and highlighted parts of a white bird. If it was a white bird over the sea I would be doing the opposite and giving about 2 stops under to retain detail in the white body.
