The code above simply swaps to the second image when the mouse goes over the first, and then back when it moves out!

That's the whole point, it's not a con. You stare at the first image and then let it swap to the second image, instead of looking like a greyscale it appears to be in colour until you blink or move your eyes. Nothing too amazing, as Rob says but easy to make and quite good fun.
