Welcome to Pixalo Jepster

I'll leave it to the Canon brigade to advise you on focus modes, but you could use zone focus where you use manual focus, determine the near and far points where the action will be taking place then set the lens on the hyperfocal distance where everything within that zone (and a bit more too) will be in focus. You will need to have a depth of field calculator - available to download on the net or on an app - to see what aperture and focal lengths will give the required zone. Then all you have to worry about is following the action and picking the right time to shoot.

Re: Which AF

I use AI Servo - in fact I never take camera out of AI Servo but I do disable focus on the shutter release and use the dedicated focus button (IIRC, you can program the 40D to use a button - I use the * button). Then I can have on-demand focussing and recompose if necessary - so I rarely stray off using the more sensitive central focus point

(If you're going to pan don't forget to switch IS to position 2 )

Oh, and

Re: Which AF

You could just set it to manual focus, point at something that is where the machines will be passing and focus. Then when the machines do pass just fire off a stream of shots.....one of them should be in focus!
