The first one works the best I think. There isn't enough obvious colour in the larger pic - you really need to look at it to see the selective desaturation.

I think this technique works best when you are trying to emphasize a certain aspect by desaturating the other less important parts.

As above, for selective desaturation to work well you need a highly saturated picture to begin with in most cases. If you had not already mentioned it I think most people would have missed the processing that you done in these shots.
