I like no 2 as well. I think it works because the dof blur of the foreground bees makes the flower head and its bee jump out, while the movement blur on the top right bee's wings adds a second focal point to think about.

Thanks for all the good comments. Number 2 is actually a cheat shot, it's the same bee flying around the thistle, just comp'd the bee into the last pic with him sitting on it. Camera setup on a tripod with same focus (on the thistle) and just shot (via cable release) the bee as it flew around it. Five minutes in CS2 and that's it.
